Blackened Chicken Tacos

1. Add all of the ingredients under chicken to a large bag and mix to combine. Allow to marinate for at least 1 hour (I tend to make in the morning and marinate until dinner).
2. Make the cilantro sauce. Add all ingredients to a high speed blender and blend until smooth. Adjust seasonings to taste.
3. Cook the chicken thighs on the grill or in a grill pan on the stovetop. Cooking each side until crispy and chicken is fully cooked through. For us it took 8 min each side on the grill.
3. Heat a skillet with olive oil on a medium high heat. Add bell pepper, onion, and poblano to pan. Sauté veggies for about 5-7 minutes.
4. Dice the chicken up into small pieces.
5. Assemble tacos and top with cilantro crema. We also added more fresh cilantro and diced tomato.
