A quick and healthy creamy basil chicken salad, perfect for blood sugar and hormone balance. Made with shredded chicken and a vibrant herb-tahini sauce, it can be served warm or cold with a variety of sides.
1. Add all sauce ingredients (fresh basil, fresh chives, fresh parsley, fresh dill, tahini, 1/2 avocado, olive oil, 2 cloves garlic, salt, and lemon juice) to a high-speed blender or food processor and mix until smooth. Add water if needed to get desired consistency.
2. In a bowl, add the 2 cups of cooked, shredded chicken and pour in the prepared basil sauce. Using tongs, mix until the chicken is fully covered in sauce.
3. Top with more fresh basil, salt, and pepper, to taste.
4. Serve warm or cold! For suggested serving bowls: cook sprouted brown rice according to package directions, and roast cherry tomatoes and asparagus by baking them at 400°F (200°C) for approximately 8 minutes. Serve the chicken salad with the rice, roasted vegetables, and a bed of greens. It would also be delicious in a wrap or with almond crackers!
