Sausage, Kale and Potato Soup

1. Heat a large pot over medium heat and add the oil. Once heated, add the sausage. Cook for about 3-5 minutes.
Add potatoes, seasonings. Cook another 60 seconds.
3. Add the broth, stirring to combine, and bring to a boil and cook until potatoes are tender, about 5-8 minutes.
4. Once potatoes are tender, remove half of them and add to a high speed blender with 1/4 cup coconut cream, blend until creamy. Stir back in creamy potato mixture with the rest of the coconut cream and the kale. Season with salt and pepper, or more red pepper as desired. Cook another minute to combine flavors and serve hot.
