A quick and healthy sheet pan dinner featuring grass-fed beef sausage, summer squashes, and red potatoes, seasoned with fresh basil and rosemary. Cooked partly in an air fryer for crispy potatoes and finished in the oven.
1. Preheat oven to 425°F. Chop up potatoes and season with olive oil, salt, and pepper. Place in an air fryer for 15 minutes at 375°F.
2. Cut up sausage and squashes, season with olive oil, salt, and pepper. Place them in the oven and cook for about 20-25 minutes.
3. When the potatoes finish their first air fryer cycle, shake them around and place them back in for another 15 minutes at 400°F.
4. Once everything is done, add potatoes onto the sheet pan with the sausage and squash, then top with rosemary and fresh basil.
*If you don’t have an air fryer, you can make the potatoes on the sheet pan. Put them in the oven first and cook for about 15 minutes before adding in the veggies and sausage.
